Dipende per quale piattaforma ti interessa sviluppare una GUI.
Io su Linux mi sono trovato abbastanza bene con le Ruby-GTK, usando come
designer Glade.
Altrimenti puoi anche guardare per le wxRuby(porting delle wxWidgets),
ma
non ho mai avuto esperienze a riguardo.
