I was wondering if anyone knows any application/framework/stuff
similar to Processing (http://www.processing.org/) using Ruby as base
language?

I’m not aware of anything quite like Processing that’s native to Ruby,
but Processing should work on JRuby.
I only played briefly, but there’s a good how-to here:
