Does anyone have any gnuplot scripts or Octave macros for producing a
waterfall plot from pre-recorded complex-float data?

With Scipy and Matplotlib installed for Python, you can use the
gr_plot_psd_c/f utility with the ‘-S’ option to get a waterfall plot.
Just a warning, Matplotlib puts the frequency on the y-axis and time
on the x-axis.
