I’ll be working on an update to Malt soon. Currently it supports these template engines:

kramdown
less
liquid
radius
rdiscount
rdoc
redcloth
rtals
ruby
sass
tenjin

What other engines are out there that I should include?

Mustache. Also, Erector, if it makes sense at all.
