Yes, there is an uninstaller, but it’s quite weird because it’s packed

I second that. The uninstall script should be available after install,
not as a separate dmg. Is there a convention for where an uninstall
script should be placed?
Also, could the installer for JRuby 1.6.0 handle optional uninstall of
JRuby 1.6.0? Only one JRuby installation can be default, and most users
will only want one version of JRuby installed at one time, so the
installer should offer to uninstall older versions. Doable?

I suppose you meant “uninstall 1.5.0” XD.
Actually there isn’t any convention about uninstallers in the mac world
because you can get rid of most of the applications just dragging them
into
the trash. Perhaps a fine solution could be create a directory under
/Applications/Utilities to contain a kind of script/application to
uninstall
jruby, but I don’t have any experience developing mac applications, so I
need some time. Any contribution is welcome, of course 
The information I have about uninstalling pkg-installed libraries
comes from here:

Basically, the installer appears to put an uninstall pkg thingy in
/Library/Receipts.
