Strange characters in production server

Hi all

I experience a strange character interpretation on my production server.
Locally a string in the MySQL DB looks like that:

Verschiedene Ohrhänger in Grüntönen

But on my production server it looks like that:

Verschiedene Ohrh�¤nger in Gr�¼nt�¶nen

I guess there’s something wrong with my character set, but I don’t know
what and where to correct it…
