When sending a plain text email with ActionMailer, the £ symbol is
corrupted to “£”.

This doesn’t happen in development, only production

The charset in the email header is utf-8, I’ve also tried sending as
ISO-8859-1 with no change

Its an Ubuntu server using Sendmail.
